Start the timer and first pour 40g of water in calm, circular movements so that the coffee grounds are evenly and completely moistened.
After 45 seconds , you then pour on 50g of water four times – the last three infusions are each done at intervals of 30 seconds .

About the origin of green coffee
Manos Juntas is a micromill in Cauca, operated by Banexport—one of Café Imports’ partners. Nearby farmers deliver their coffee cherries to the processing station on the day of harvest, where the mill takes care of processing, drying, and storage. Farmers are paid immediately by Banexport at a fixed price well above the market rate, while the demanding processing infrastructure is managed centrally and with great precision by Banexport.
Upon arrival, Brix and pH are measured. The cherries then undergo a 5-day anaerobic fermentation in hermetically sealed tanks labeled with the names of the individual farmers (ensuring full traceability). Nitrogen is introduced to specifically stimulate yeast activity, and the process is continuously monitored.
For the Natural process, the whole cherries then undergo an additional 5-day “aging” phase in the tank before being dried in solar dryers for 30–45 days.
