
Finca Deborah & Jamison Savage
Finca Deborah was founded in 2008 by Jamison and Leslie Savage and is now one of Panama’s most renowned coffee farms. At extreme altitudes in the highlands of Chiriquí, they primarily cultivate the rare Geisha variety—with the goal of developing exceptional, modern flavor profiles. Jamison Savage is considered a pioneer in coffee processing and was one of the first to commercially implement carbonic maceration in coffee processing. Despite international recognition, the farm continues to experiment—in agronomy and processing, and, since 2016, in collaboration with Sasa Sestic.
Sustainability is not merely a marketing term here, but the foundation of their work: The farm is shade-grown, operates without herbicides or harmful chemicals, and strives to maintain as balanced an ecosystem as possible. Ground cover plants grow among the coffee trees, creating a biodiverse environment on the farm that is home to many species of birds and insects. At the same time, Finca Deborah places great emphasis on its responsibility toward the local community: a large portion of the staff comes from the Ngäbe-Buglé community and is supported with good housing, provisions, and infrastructure. In this way, Finca Deborah combines technical precision and a spirit of innovation with respect for nature, terroir, and the community.
